About
Mira & Owl Bakery was founded in 2019 by Mira Castellanos and her partner, Owen Park. They both trained at the Tartine bread program in San Francisco before moving to Portland. The bakery uses a 14-year-old wild starter that Mira maintained through three previous kitchens.
Schedule and pickup
The bakery operates on a Wednesday–Saturday schedule, with bread pickup from 11:00am to 6:00pm or until sold out. Pre-orders open every Sunday at 8:00pm via the website and close once weekly capacity (220 loaves) is reached. The bakery does not currently offer delivery.
Bread
Three breads are baked weekly: a country loaf with stoneground heritage wheat, a 100% rye porridge loaf, and a seasonal special such as olive-rosemary or roasted garlic. All loaves are hand-shaped and proofed cold for 18 hours. Prices range from $9 to $14 per loaf.
Pastry
On Saturdays only, the bakery sells laminated pastry: a brown-butter morning bun, a kouign-amann, and a rotating savory turnover. Pastry is cash-only and limited to two per customer. The Saturday morning bun has been a customer favorite since the bakery's third week of operation.
